About the Author
Kentucky native Maggie Green is the author of The Kentucky Fresh Cookbook. Green owns The Green Apron Company, a consulting firm specializing in culinary nutrition and cookbook development. As a cookbook editor Maggie has edited several well-known trade cookbooks including James Beard Award-winning cookbook, BakeWise by Shirley Corriher, The Ultrametabolism Cookbook by Dr. Mark Hyman, and the 75th Anniversary Edition of the Joy of Cooking. Green is on the Medical Advisory Board for Humana's Active Outlook Program where she writes food and nutrition content for their award winning magazines. Maggie is a graduate of the University of Kentucky with a degree in food and nutrition and is licensed as a dietitian in Kentucky and Ohio. Maggie is also a proud graduate of the Culinary Arts Management program at Sullivan University's National Center for Hospitality Studies in Louisville. Maggie loves the beautiful Bluegrass state and is proud to say she grew up in Lexington, and still lives in Kentucky with her husband, the best male cook she knows, and their three children.

Real Cooking for Everyday Cooks

I have an entire shelf of cookbooks, but most rarely get used. Maggie's cookbook is totally different. The day I got my copy, I spent a couple of hours just reading. Maggie weaves personal stories, cooking tips, and interesting Kentucky information all together in a way that has gotten me excited about cooking again. The format allows me to move through an entire year month by month focusing on fresh produce. I really like the way recipes are divided up seasonally. Maggie makes it easy to put together a great meal. I have already fixed three recipes successfully. You don't have to be Julia Child to fix great meals! This is also a great book to get the whole family involved in the kitchen. The tradition of the family dinner needs to be rekindled and this cookbook is a good start!

Cooking Fresh

I was familiar with the Cookbook as I went to a Seminar on cooking fresh and buying fresh at Farmer's Markets, so I had met the author and she actually
demonstrated a recipe called Beer Cheese, her version.. I love the book, "THE KENTUCKY FRESH COOKBOOK" and would recommend it if you really like cooking fresh and learning more about the ingredients you use.. For example I wasn't aware that Kosher Salt blends better even though it is coarse.. Well I am happy with my purchase and I am happy with the price I got it for on Amazon, I saved $9. even after shipping and handling...

A Great Cookbook from an Author/Publisher Unknown to Me

The Kentucky Fresh Cookbook was a great find/purchase for me. It includes 200+ interesting, "easy to use" recipes, is organized so that the recipes are presented by months/seasons/holidays, contains "A Calendar of Menus" that include menus for holiday meals ("A Christmas Dinner, Kentucky Style") and emphasizes fresh ingredients. It also includes a variety of recipes popular in Kentucky that involve ingredients and traditions from/of this state.

Already, my wife and I have tried two recipes from the book. We greatly enjoyed "Shaker Pumpkin Muffins" and "Sweet Potato Vegetable Soup." Other recipes for us to try include "Winter Wheat Berry Salad," "Kentucky Cornbread Strata," and "Butternut Squash and Chickpea Stew." Based on the two recipes we've tried and our successes with them, I highly recommend this cookbook to others.
